Since tangerines are high in sugar and citric acid - natural preservatives - they are ideal for drying. Dried tangerine slices can be used to decorate cakes, jellies and other desserts, but most often they are used as a purely decorative element. The fruits can be "restored" like mushrooms, or they can be chopped and used as a seasoning.
It is necessary
- - tangerines;
- - sharp fruit knife;
- - wooden tray;
- - gauze;
- - baking sheet;
- - baking paper;
- - container with a tight lid.
Instructions
Step 1
Cut the tangerines into slices before drying. To get a beautiful cut, do not cut across, but along. Use a sharp knife to avoid squeezing the juice out of the fruit.
Step 2
Sun dry your tangerines if you live in dry, hot climates. High temperatures, low humidity and constant draft are excellent drying conditions. If, according to the weather forecast, no more than 60% humidity and no less than 30 ° C heat for several days are promised, it's time to dry the tangerines. Place them on a wooden tray or board, cover with gauze and keep them outdoors during the day, and take them indoors at night before dew falls.
Step 3
Dry the tangerines in slices in the oven. If you do not have a fan built into your oven, keep the door slightly ajar to create a slight draft. Preheat the oven to 140C. Place on a parchment-lined baking sheet and dry the slices for an hour, then turn and dry for an additional hour. The finished tangerines are dry, slightly pliable and darkened. Let the tangerines cool completely before storing them.
Step 4
Dry the tangerines under the lid. Place the tangerine in a cool plastic or glass container with a tight-fitting airtight lid. Dry the fruit for seven days by shaking the container occasionally. If after seven days condensation remains on the walls of the container, and the fruits are not dry enough, dry them in the oven for 20-30 minutes.
