Parmigiano is a classic Italian dish named after the cheese of the same name. Traditionally, eggplants are the main ingredient in this dish, but they are baked in such a way that they can be easily confused with something filling, like meat or chicken.

  • - 150 g of Mozzarella cheese;
  • - 50 g flour;
  • - 3 cloves of garlic;
  • - 100 g of Parmesan cheese;
  • - 2 eggplants;
  • - basil;
  • - can of canned tomatoes;
  • - olive oil;
  • - salt.

Instructions

Step 1

Pour olive oil into a preheated skillet. Chop the garlic cloves and add to the oil, as soon as it is browned, it must be removed from the pan so that it does not burn.

Step 2

Take canned tomatoes and chop finely. Transfer to a frying pan, bring to a boil and simmer over low heat for 12-15 minutes.

Step 3

Peel the eggplants and seeds, cut lengthwise into strips of medium thickness (one and a half centimeters). Salt the eggplant slices and leave to lie on the table for a while so that they release their bitterness, then blot with a napkin or paper towel.

Step 4

Lightly dust the eggplants with flour and place in the grill pan. Fry on both sides in olive oil until golden brown.

Step 5

Cut the Mozzarella cheese into small slices, chop the basil.

Step 6

Grease a baking dish with olive oil, put 1/2 part of the stewed tomatoes in the first layer. Then add the basil, eggplant, slices of Mazzarella cheese, the remaining tomatoes and sprinkle with grated Parmesan cheese.
