    • 600g sugar;

    • a large saucepan with a lid.
    • For canning:
    • 1kg of prunes;
    • 800g water;
    • 350g sugar;
    • cans with a capacity of 0.5 liters;
    • sterilization tank;
    • colander.

Step 1

Choose a cooking method depending on how ripe the prunes are. Overripe is good for jam. It is better to cook jam from ripe fruits, and for compote you need slightly unripe ones, from which it is easy to separate the seeds. In the latter case, thin-skinned berries are preferable.

Step 2

For compote, take prunes and water in a 1: 4 ratio. For 100g of fruit, you will need another 60g of sugar and half a lemon. Rinse the plums thoroughly with water at room temperature or slightly warmer. Remove the bones.

Step 3

Place the prunes in a saucepan with a tight-fitting lid. Heat the required amount of water according to the calculation, but do not bring it to a boil. Pour over the fruits, close the lid and set to infuse for three hours.

Step 4

Boil the compote in the same water. Add the desired amount of sugar and bring to a boil, then reduce heat to medium. Before the end of the process, squeeze the lemon juice into the compote. Such compote must be cooled before serving.

Step 5

For winter preparations, prunes are cooked in a slightly different way. You need more sugar - 350-400g per 1 liter of water. Sort out the fruits, remove the stalks. Remove the crumpled plums.

Place the prunes in a colander and put them in boiling water for ten seconds. Cool the fruit in cold water. Peel the plums. After scalding and cooling, the rind is usually very easy to peel off. Divide the plums into halves and remove the seeds.

Boil the sugar syrup. For 1 kg of already processed plums, take about 800 g of water and 350 g of sugar.

Step 8

Put the prepared plums in small jars. Pour in syrup. Close the jars immediately and place them in the tank to sterilize. Preheat the tank to 85 ° C for 20 minutes, then sterilize the cans for another 25 minutes. Immediately after sterilization, the jars must be refrigerated.
