Instructions

Step 1

Arriving at the store, carefully study the packaging in which the cereal is located. There are a lot of rice varieties: white, brown, red, parboiled, long-grain, round-grain, medium-grain, wild, etc.

Step 2

If in front of you is a packaging with the inscription long-grain, then do not take it, this variety does not suit you. It has a thin and long grain that does not stick together during cooking, and absorbs very little water. Basically, such rice is suitable for salads, it is very good to make side dishes from it for both fish and meat dishes.

Step 3

When you get your hands on round grain rice, then you should know that it is suitable mainly for making milk porridge, casseroles, puddings, therefore it is also called milk rice. Also, it is from it that the famous sushi is prepared. Such rice has almost round, opaque grains with a high starch content. They consume a fairly large amount of water and stick together during cooking. Please note - the same variety has a different color with different processing. In addition to white, there is also brown and steamed. The latter are considered healthier than white rice because they are less processed. But for meatballs, round grain rice is not suitable.

Step 4

For meatballs, use a medium grain variety. It is distinguished by its grain, short and wide. If we compare this rice with long-grain, then it contains a greater amount of starch, but not so much as in round-grain. Just so that the meatballs do not fall apart. When cooking, this rice absorbs a sufficient amount of water and boils quite well, so the meatballs increase in size. It also has the ability to absorb the aromas and flavors of other ingredients in the dish. Therefore, this rice is ideal for meatballs.
