Kebab recipe marinated in mineral water

In order to prepare a delicious kebab according to the proposed recipe, prepare the following ingredients:

- pork meat - 1.5 kg;

- lemon - 4 pcs.;

- onions - 1 kg;

- mineral water - 1.5 liters;

- salt;

- spices.

It is very important to choose your meat carefully. Prefer fresh homemade pork. The neck or ham is perfect for barbecue. Pork ribs are no less delicious kebabs. Please note that if you decide to cook kebab from ribs, then for this recipe you will need more of them than pulp, about 2 kg.

Cut the meat into small even pieces. Divide the ribs into portions, 1-2 ribs each. Wash the lemons thoroughly and squeeze the juice. To make it easier to squeeze out the juice, first put the citrus fruits in boiling water for 2-3 minutes or heat them in the microwave. In a deep bowl, mix the meat and lemon juice well.

Cut the peeled onion heads into small cubes or thin half rings. Add to a bowl of meat. Mix everything well, salt, pepper and season with spices. The easiest way is to use a ready-made mixture of barbecue seasonings. You can prepare such a mixture yourself. To do this, mix black ground pepper, red and white peppers, add paprika and hops-suneli, add a little coriander and cumin. Mix everything thoroughly in a bowl with meat and leave for 15-20 minutes in the room.

Pour the prepared kebab with highly carbonated mineral water and marinate for at least 2 hours. Ideally, leave the meat soaked overnight.

About marinade

There are some rules that must be followed in order to make wonderful tender kebabs.

First, the meat must be completely covered with marinade. A press placed on the topmost layer of meat will give a very good effect. It will not allow the meat to lose its juice, as a result the kebab will be softer and juicier.

The mineral water marinade affects the structure of the meat only due to the gas bubbles penetrating into it. At the same time, such a marinade does not add any extraneous specific taste to the kebab, like wine or vinegar.
