If you cook fresh mackerel according to certain recipes, the dish will turn out to be delicious. You can fry it after pickling it, or cover it with batter. The fish is also cooked without oil with a spicy Asian sauce.
Quick recipe
If you would like to taste fried mackerel right now and not spend a lot of time and effort on cooking, use a simple recipe. You will need:
- 1 kg of mackerel or 650 g of fillet;
- 2 medium-sized onions;
- 2 g of ground pepper;
- juice of half a lemon;
- salt to taste;
- flour or rusks for rolling;
- sunflower oil for frying.
For some tasters, fried mackerel scares off with its smell, especially during cooking, when heated. The onion and lemon will help fight it off. If you are not cooking fillets, cut off the head, remove the entrails. Rinse the mackerel in cold water and lay to dry on a towel. Cut into portions and place in a bowl.
Chop the onion into a gruel in a meat grinder or with a blender. Pour lemon juice into it, add salt and pepper. Grease fish pieces with this mass, cover the bowl with a lid, and leave to marinate for 15 minutes.
Pour flour or bread crumbs into another container. Pour oil into the pan, heat it slightly. Dip the slices in the breading and carefully place them in the pan. Cook on each side for 8 minutes.
Mackerel in onion batter
According to this recipe, mackerel, fried in a pan, also turns out to be delicious. For 500 g of fish fillets, take:
- 1 small onion;
- 1 egg;
- 2 tbsp. mayonnaise;
- 2 tbsp. flour
- salt.
Rub the onion on a fine grater, add the egg, flour, salt, mix everything to make a homogeneous batter. If you have whole carcasses, make a longitudinal cut in the back, divide the fish in two so that the ridge and rib bones are removed. Cut into portions, remove small bones.
Pour flour into a bowl, first roll the pieces in it, then in batter on all sides. Fry in hot sunflower oil until golden brown.
Mackerel fried without oil
Cook mackerel in a non-oil skillet with hot Asian sauce. For him you will need:
- zest and juice of half a lemon;
- 2 cloves of garlic;
- 0.5 tsp fresh ginger;
- 0.5 pieces of hot chili;
- 2 sprigs of cilantro;
- 2, 5 tbsp. spoons of soy sauce;
- 1 tsp liquid honey;
- 5 tbsp. olive oil;
- 2 tsp sesame oil.
Also take:
- 2-3 fresh mackerels;
- zest of half a lemon.
Fillet the mackerel, drizzle with lemon juice, and fry the halves in a nonstick skillet, pressing down occasionally with a fork to release the fish oil. Fry on both sides until golden brown.
For the sauce, grind the ginger, chili, garlic in a blender, chop the cilantro, add the rest of the sauce ingredients, stir.
Put the fish on boiled rice, pour over the sauce, you can serve Asian-style mackerel.
