Muesli was invented at the beginning of the 20th century by the Swiss physician Maximilian Oskar Bircher-Benner. A supporter of not just a healthy diet, but a raw food diet, Benner added pieces of grated apple and a little honey to oatmeal, a handful of healthy nuts and began to offer such a healthy breakfast to patients at his clinic. Crispy muesli, glistening with butter, honey or sweet syrup, is commonly called granola in the west.

    • 1/2 cup shelled sunflower seeds
    • 1/2 cup shelled pumpkin seeds
    • 1/2 cup sesame seeds

    • 1 cup chopped dried fruit
    • 1 teaspoon (2.6 grams) ground cinnamon
    • any fresh fruit (apples
    • bananas
    • peaches)
    • 180 g natural unsweetened yogurt
    • Spicy granola
    • 3 cups oatmeal
    • 1/4 cup chopped almonds
    • 2 teaspoons of cinnamon
    • 1/3 cup apple juice
    • 2 tablespoons honey
    • 1 tablespoon canola oil
    • 1/4 teaspoon vanilla extract
    • 1/8 teaspoon salt
    • 1/3 cup dried apples
    • 1/3 cup dried cranberries

Instructions

Step 1

Classic muesli according to Bircher-Benner

Spoon the cereal into a suitable bowl. Cover with warm water. Leave it overnight. Mix yogurt with lemon juice and honey. Place in the oats soaked in water. Rub the unpeeled apples directly into the muesli and stir immediately so that they do not darken. Sprinkle with chopped nuts on top. Eat for breakfast.

Step 2

Muesli in Swiss style

Place all ingredients except fresh fruit and yoghurt in a sealable container. Pour so that about 1/5 of the container is free. Shake several times to mix. Eat in the morning with natural yoghurt and chopped fresh fruit. If you like the vanilla flavor, you can store the vanilla pod in the same container as the muesli.

Step 3

Make sure that dried fruits and nuts are cut no larger than the flakes for one bite. Store the muesli container in a cool, dark place. Do not mix a very large portion beforehand, just enough to last one to two weeks.

Step 4

Spicy granola

Preheat oven to 220C. Combine oats, almonds, and cinnamon in a large bowl. Set aside. Then combine the apple juice, honey and canola oil in a small saucepan and cook over medium heat until the honey dissolves. Add vanilla extract and salt and stir.

Step 5

Pour the apple juice, butter and honey mixture over the oatmeal and stir until lightly moistened. Line a large baking sheet with baking paper and spread the moistened cereal evenly. Bake in preheated oven for about 10 minutes, stir and bake for another 5-10 minutes, or until beautiful golden brown. Chill slightly, return to bowl and add dried apples and cranberries. Stir. Allow to cool completely and store in a dark, dry place in an airtight container for no longer than 1-2 weeks.
