Mushroom soup in bread is especially common on the Czech table. Such an original presentation makes the meal unforgettable and adds a special piquancy to the dish.
It is necessary
- - 500 g of champignons;
- - onion head;
- - carrot;
- - 1 tbsp. a spoonful of flour;
- - 1 tbsp. a spoonful of butter;
- - 1 liter of broth;
- - 1 tbsp. a spoonful of olive oil;
- - 100 ml of dry white wine;
- - 1 egg;
- - salt and black pepper to taste;
- - parsley;
- - Rye bread.
Instructions
Step 1
Wash the champignons and chop coarsely. Peel and chop the onions and carrots. Fry these ingredients in the butter and olive oil mixture in a saucepan.
Step 2
Add white wine to a saucepan and simmer until evaporated. Then add flour, stir and pour in broth. Season with salt and pepper after a couple of minutes to taste. Cook for 15 minutes.
Step 3
In a separate bowl, beat the egg, then pour it into the soup in a thin stream, stirring constantly in a saucepan with a fork. Thanks to this, a light "cobweb" will turn out in the dish. Remove the soup from heat and let it brew with the lid closed.
Step 4
Meanwhile, cut off the top of the bread and remove the pulp. Lubricate the inside with butter and dry the bread in the oven for 10-15 minutes.
Step 5
Place the bread on a plate, pour the soup into it and sprinkle with herbs. Then cover the bread with the top cut off earlier and serve.
