- 2 medium herring
- 200 g butter
- 150 ml of cold milk.
- Optional: a pinch of grated nutmeg
- 1 teaspoon hot mustard
- 2 green apples.

Step 1
To prepare herring oil, the herring must first be cut up.
To do this, first of all, you need to cut off the tail, head and edge of the abdomen of the herring.
Do not discard the cut off tail and head.
Then remove the intestines and offal.
Cut the herring along the back and remove the skin from both halves.
Separate the fillet from the backbone by cutting off the ribs from each fish half with a knife. Remove the remaining thin bones.
Step 2
Put the herring fillet in a bowl, pour over cold milk and soak for 2 hours.
Step 3
Finely chop the soaked herring, mix with softened butter and rub through a sieve. If this procedure is for you a certain difficulty, you can go for a little trick: just skip the fillet twice through a meat grinder and then mix with softened butter.
Step 4
Transfer the resulting herring oil to a bowl and beat well with a spoon.
You can add nutmeg and mustard for a more savory flavor.
Step 5
Put the prepared herring oil on a herring tray or any flat dish, shape the mass into a fish, attach the previously cut off head and tail. Decorate around with apple or lemon slices and parsley sprigs.
Herring oil will turn out very tasty if you add grated apple to it. You can serve such a dish on the table in an oil can or put on toasted slices of bread.
