Step 1
Peel the pumpkin, grate on a fine grater. Add sugar and half a glass of water to the pumpkin puree. Bring the mass to a boil and cook over low heat for about 10 minutes until the pumpkin is cooked.

With a grater, remove the zest from one lemon, squeeze out the juice. Add lemon juice, zest and vanilla sugar to the pumpkin mass. Mix everything thoroughly.
Step 3
Dissolve agar agar in one glass of cold water and put on fire. Bring the liquid to a boil, stirring constantly. the powder should completely dissolve.
Step 4
Pour the agar agar into the pumpkin mixture, stir and pour into the mold. Let cool and put the jelly in the refrigerator. When it hardens, dip the pan in hot water for a few seconds and turn it over. Garnish the pumpkin jelly with fresh berries and mint leaves.
