Step 1
If the steak was previously frozen, place it in the refrigerator the day before to thaw. Remove the meat from the refrigerator and let it sit for a while until it reaches room temperature.

Blot the meat with paper towels to absorb excess moisture. The outside of the steak should be dry. Place a skillet on the stove. Increase heat or temperature as much as possible. Place a lump of butter in the pan and wait until the pan is almost smoke-free. Then add another piece of butter.

Sprinkle salt and ground pepper on a cutting board. Dip the meat in the spices and press down lightly with your palm so that the salt and pepper adhere sufficiently to the surface. Repeat this process for the back of the steak as well.

Dip the prepared meat into the pan and leave it alone for one to one and a half minutes. You will only get a juicy steak if the crust is sufficiently toasted and the juice remains inside the meat. Watch the color of the side to be browned. Once it changes, it's time to turn the meat to the other side. It usually takes about 3 minutes to cook each side.
Step 5
The specified time is usually enough for the steak to be medium-rare. If the thickness of the meat is too thick or a thoroughly cooked steak is required, place the meat in the oven at 180 degrees for 3-7 minutes. When the steak is completely cooked, remove it from the oven and rest for 10-15 minutes. This is necessary so that the juice is evenly distributed throughout the meat and makes it as juicy as possible.
