Instructions

Step 1

Thaw the squid carcasses. Scald them with boiling water and peel off the film and entrails. Remove the tough slices from the carcasses.

Boil a liter and a half of water, add salt and lower the squid carcasses into the pan. As soon as the water boils again, reduce the heat and cook the carcasses for 3 minutes. Then use a fork to remove the squid from the pan, letting the water drain from the carcasses.

Rinse carrots, peel, cut into strips. You can use a coarse grater. Cut the peeled onions into thin half rings. Heat the oil in a deep frying pan. Fry chopped onions and carrots, reducing heat, until soft.

Cut the cooled squid carcasses into rings, or into half rings, it is important to cut thinly. Add the squid to the common frying pan, salt and pepper to taste, stir. Simmer all ingredients for a couple of minutes. Sprinkle chopped fresh herbs on the finished dish or arrange beautifully with parsley sprigs.
