In order to cook Mexican lentils, you need to stock up on the following provisions: lentils - 250-300 g; Chili pepper - 2 pcs.; bay leaf - 1 pc.; onions - 120 g; sweet pepper - 400 g; ground sweet pepper - 1 tsp; vegetable oil - 2 tbsp; vegetable broth - 750 ml; green onions - 1 bunch; chips - 1 bag (small); tomatoes (peeled, canned) - 425 g; lemon juice - 1 tbsp;
• First you need to prepare the lentils. Thoroughly rinse it in a bowl, peel the chili pepper pods. We put 500 ml of broth on a small fire, and as soon as it starts to boil, pour lentils, chili peppers and bay leaf into it. You need to cook lentils with peppers for 30 minutes.
• Drain the tomato juice through a sieve. We peel the onions and chop them finely, do the same with a pod of sweet pepper.
• Then fry freshly chopped onions and bell peppers in sunflower oil. Squeeze the garlic with a hand press, add tomato paste and ground sweet pepper.
• Pour the remaining 250 ml of broth, put on low heat and simmer for 5 minutes.
• Cut the tomatoes into small pieces, pour abundantly with the sauce, add lemon juice, lentils, salt and simmer for 2 minutes.
