Ingredients:

  • Butter - 10 g;
  • Salt;
  • Freshly ground pepper;
  • A bunch of dill;
  • Bread crumbs - 2 tablespoons;

Ingredients for the sauce:

  • Vegetable oil - 120 g;
  • Egg yolks - 2 pcs;
  • Mustard - 2-3 tablespoons;
  • Vinegar - 50 g;
  • Sugar - 40 g;
  • Freshly ground pepper.

Preparation:

  1. You need to rinse the herring and cut off the fins from it. It is important to remove bones and veins from the herring very well. Cut the herring in half lengthwise.
  2. Rinse the turnip under running water and cut into thin slices. You can use leeks for this dish, you only need the white part.
  3. Soften one tablespoon of butter and fry the onion in this oil. For this dish, the onion should be slightly soft. Grease a heat-resistant dish with the remaining spoonful of butter oil and put onions as the base of the dish.
  4. Then you need to lay the herring skin down on the cutting table. Season it to your liking with pepper and salt. The dill must be washed and finely chopped. Sprinkle the fish with chopped dill.
  5. Now you need to roll the herring fillets into rolls, with the skin outward, and the seasonings inward. Place the herring rolls on the onion base. The fish should lie very close and tight to each other. Turn on the oven in advance for heating, the required temperature for cooking fish is 270 degrees.
  6. Mix all the ingredients in the sauce and season with salt if necessary. Stir the sauce well to make it smooth. Pour mustard sauce over the fish and sprinkle with bread crumbs on top.
  7. Place the herring in the mustard sauce in the oven and bake for about half an hour, until the surface of the dish is lightly browned.

Mustard herring can be served hot or cold as a snack.
