Babaganush is a sauce that the people of Iraq invented. The dish is served on the table in a variety of ways. It can be combined with croutons, fresh bread, or used as a sauce for any meat.
It is necessary
- - 3 cloves of garlic
- - 4 small eggplants
- - 50 g sesame seeds
- - olive oil
- - ground black pepper
- - salt
- - parsley
- - 1 lemon
Instructions
Step 1
Place the eggplants in a baking dish greased with olive oil. Pierce them with a fork in several places. When done, carefully remove the skin and chop the pulp thoroughly.
Step 2
Use a blender to make a dressing with sesame seeds, garlic, juice of one lemon, salt, black pepper and olive oil. The mixture should be the consistency of mayonnaise.
Step 3
In one bowl, combine chopped parsley, eggplant pulp, and cooked dressing. Garnish with green onions or parsley sprigs.
Step 4
Babaganush is served on the table in a separate bowl. It can be spread on a slice of bread, used as an additional ingredient for meat or fish dishes. Babaganush goes well with potatoes, vegetables and at the same time is an independent snack.
