  • - a pinch of nutmeg;
  • - salt;
  • - ground black pepper.
  • Cheese soup and zucchini and bacon:
  • - 6 thin slices of bacon;
  • - 2 small young zucchini;
  • - 1 onion;
  • - 3 potatoes;
  • - 1, 2 liters of meat broth;
  • - 100 g of spicy cheese;
  • - 150 ml of cream;
  • - olive oil for frying;
  • - salt;
  • - ground black pepper;
  • - chives for decoration.

Step 1

One of the easiest options for a delicious soup is a four-cheese chowder. Finely chop the onion and fry in butter until golden brown. It is convenient to fry onions in a thick-walled saucepan in which you will cook the soup. Peel the potatoes, cut them into small cubes and add to the onions. Stir the mixture and pour hot water into it. Bring soup to a boil, reduce heat, and simmer potatoes until tender. Pour the mixture into a blender and puree.

Step 2

Return the soup to the stove, add the grated emmental, parmesan and cheddar to the pot. Bring the mixture to a boil and, stirring occasionally, cook until the cheese dissolves. Season the soup with salt, pepper and grated nutmeg. Finely chop the blue cheese.

Pour the prepared soup into warmed bowls, add a couple of tablespoons of crumbled blue cheese and a few drops of balsamic sauce to each. Decorate the soup with sprigs of curly parsley. Serve with white bread toast or croutons.
