The taste of pancakes has been familiar since childhood. There are several types of this dish: yeast, fruit, meat and vegetable. Try making delicious and delicate cauliflower pancakes. They can be served hot or cold.

- 1 head of cauliflower;
- 1 egg;
- 2-3 tablespoons of Parmesan cheese;
- 2 tablespoons flour;
- 2 tablespoons of sour cream;
- 1 teaspoon of paprika;
- 1 clove of garlic;

Instructions
Step 1
Rinse the cauliflower thoroughly under cold water. Disassemble it into small inflorescences. Put the cabbage in a saucepan, cover with water and salt. Bring to a boil and simmer for 7-9 minutes. The vegetables should soften slightly without crumbling. Then toss the cauliflower in a colander and let the water drain. Once the inflorescences have cooled, chop them into small pieces in a blender or chop them with a knife.
Step 2
Rinse eggs under cold water and beat well in a deep bowl with a whisk or mixer. Then add sour cream, some paprika and salt. Stir the mixture. Sift the flour through a sieve. Grate Parmesan on a fine grater or cut into strips. Peel the garlic, cut into wedges and finely chop.
Step 3
In a saucepan, stir in eggs, cheese, garlic, and cooled cauliflower. Add flour in small portions and knead the dough. Leave it on for 5-10 minutes. The consistency of the mass should be the same as for ordinary pancakes, homogeneous, slightly thicker than sour cream. Heat the pan well, add vegetable oil. Form small pancakes with a spoon and fry on both sides until golden brown. Try to make them not very thin so that they do not fall apart during the frying process.
Step 4
Spread the finished pancakes on paper napkins so that the oil is absorbed into them. Decorate the dish with paprika. Serve pancakes with sour cream or any sauce.
