    • 2 kg of lamb;
    • 100 g lard;
    • 2 onions;
    • 200 g sour cream;
    • 1 tbsp flour;
    • 2 tbsp vegetable oil;

    • 2 bay leaves;
    • 0.5 tsp ground black pepper;
    • 0.5 tsp salt;
    • 1 tbsp juniper berries.

    • 500 g lamb saddle;
    • 3 tbsp dark soy sauce;
    • 1 tbsp dry sherry;
    • 5 tbsp peanut butter;
    • 2 cloves of garlic;
    • 0.5 tsp salt;
    • 0
    • 5 tsp ground black pepper;
    • 2 tbsp sesame oil.

Wash the meat, remove fat and films. Excessive fat will interfere with heat exchange during cooking. Films should be removed as they are inedible.

Cut the bacon into thin slices. Remove the lamb from the marinade. Use a sharp, thin knife to puncture the piece of meat and stuff it with bacon. Brush the lamb with vegetable oil and roast on a skewer until tender. Spread sour cream on the meat from time to time. 5-7 minutes before cooking, sprinkle the lamb with flour on all sides and pour over the released juice.
