In our understanding, this is just a curd cake with coffee crumbs, but abroad this delicacy is proudly called a cheesecake in Russian!
It is necessary
- For the basics:
- - 1 large yolk;
- - 50 g of icing sugar;
- - 100 g of butter;
- - 175 g flour;
- - 30 g of cocoa powder.
- For filling:
- - 410 g of cottage cheese;
- - 75 g of sugar;
- - 90 ml of cream;
- - 2 large eggs;
- - 1 tbsp. decoys.
- For sprinkling:
- - 125 g flour;
- - 30 g of cocoa powder;
- - 10 g of instant coffee;
- - 100 g of butter;
- - 100 g of sugar.
Instructions
Step 1
Chop the butter into small pieces and place in a bowl. Sift flour with cocoa and powdered sugar there, grind everything into crumbs.
Step 2
Add the yolk to the dry ingredients and knead the dough. If the dough is crumbling, add 1 tbsp. water. Wrap the dough in plastic wrap and refrigerate for half an hour.
Step 3
Preheat the oven to 180 degrees. Lubricate a detachable mold with a diameter of 24 cm with oil. Remove the dough from the refrigerator and roll it into a layer about 0.5 cm thick. Put it in a mold, form sides, prick it in several places with a fork and send it to a preheated oven for 10 minutes. Take out the base and lower the temperature in the oven to 150 degrees.
Step 4
Using a mixer, mix the cottage cheese with the rest of the filling ingredients (if the cottage cheese is too grainy, I recommend rubbing it through a sieve beforehand).
Step 5
Finely chop the sprinkling oil with a knife and grind with the rest of the ingredients into crumbs.
Step 6
Put a layer of curd filling on the base and sprinkle it with flour crumbs. Put in the oven for about an hour. After cooking, allow to cool at room temperature, and then keep in the refrigerator for several hours. If desired, sprinkle with icing sugar for serving.
