Step 1

Prepare and sterilize jars with lids in advance. Wash and dry 2 kg of tomatoes and a pound of apples. Slice the tomatoes. Cut the apples into quarters, remove the core. Mince the tomatoes and apples.

Transfer the resulting mixture to a saucepan, add a third of a glass of sugar and the same amount of salt. Put on fire. When the mixture comes to a boil, reduce heat and cook for another two hours, stirring regularly.

At the end of cooking, add spices: a teaspoon each of black and red pepper, a little bit of nutmeg and half a teaspoon of cinnamon. Mix everything well, cool slightly and rub through a sieve. Pour the finished ketchup into jars, close the lids and let cool. Store jars of ketchup in a cool place.

If you want to stock up on ketchup for a whole year, the following recipe will do. Take 5 kg of tomatoes, wash, dry, mince. Bring the resulting tomato puree to a boil in a saucepan and rub through a sieve.

Peel and finely grate five onions and add to the tomato puree. Add a glass of sugar, a pinch of salt, the same amount of mustard and a dozen black peppercorns to the mixture. Mix everything thoroughly and cook for 25-30 minutes. At the end of cooking, add a glass of vinegar. Pour the finished ketchup into jars and close the lids.

If you don't need a strategic supply of ketchup, this express recipe will do. Stir a tablespoon of flour in half a glass of cold water. Cook the resulting mixture over a fire until it thickens slightly. Add 30 g of sugar, 100 ml of vinegar, a pinch of salt, two chopped cloves of garlic, a little bit of mustard. Add 400 g of tomato paste and mix thoroughly. The ketchup is ready.
