Glaze: what it is
The main purpose of sugar glaze is to create a beautiful smooth surface on confectionery. A properly welded coating is moderately thick and viscous; it is applied with a silicone brush and then dried in the oven. Already baked products are covered with glaze. As a result of drying, the coating becomes glossy.
You can make icing from powdered sugar or granulated sugar. Egg whites can be added to the mass. They make the mixture denser, it dries faster and speeds up the decorating process.
Try a classic sugar and protein frosting. From the specified number of products, approximately 270 g of glaze will be obtained.
You will need:
- 1 cup of sugar;
- 2 egg whites;
- 1 glass of water;
- vanilla extract.
Use any flavor you like instead of vanilla extract.
Put sugar in a saucepan, add water. Bring the mixture to a boil, then remove the foam and reduce the heat. Boil the syrup until the crystals are completely dissolved and the mass itself thickens. A blank for glaze is considered to be cooked if a small portion of syrup, dipped in cold water, easily rolls between the fingers into a soft ball.
Whisk the egg whites into a stiff foam. Add the hot syrup gradually while whisking the mixture. Add a few drops of vanilla essence and heat the frosting to 60C, stirring constantly with a wooden spatula.
The glaze can be tinted with food coloring or a few drops of beetroot or other freshly squeezed juice.
Decorating baked goods with glaze
The shiny finish will brighten up gingerbread cookies, pies, cookies or cakes. Try decorating curly cookies - you can make them for children's parties or give them to friends.
You will need:
- ready-made shortbread dough;
- icing sugar;
- sugar beads or chocolate sprinkles.
Roll out the finished shortcrust pastry on a floured board. Cut out stars, herringbones or little men from the dough with curly notches. Spread the products on a greased baking sheet and bake in an oven preheated to 200 ° C. Remove the finished cookies from the baking sheet and chill on the board.
Divide the icing into 3-4 parts. Add dye to each - green, pink, yellow or brown. Beet juice or cranberry juice can be used as a pink color, and cocoa powder will give brown color. Mix the dye with the glaze thoroughly, and then heat the mass.
Using a silicone brush, apply the colored icing to the cookies. If you want to dye one piece in two colors, first apply one shade of glaze, let it dry, and then apply the second. Spread the finished products on a baking sheet and place in an oven preheated to 80 ° C. Dry the frosting, then remove from the baking sheet and refrigerate. Cookies can be decorated with chocolate chips or sugar beads.
You can decorate the cookies differently. Place the white frosting into a narrow, smooth tip syringe, and then draw monograms, lines or curls on the surface of the products. After painting, the cookies must be dried in the oven.
