"Ofton madyat" in translation means "bear paws" - this is the name of one of the popular dishes of Mordovian cuisine. These are meat cakes with breadcrumbs, which outwardly really resemble the paws of a bear. They are baked in the oven and served hot. Delight your loved ones with this original and hearty dish, especially since its preparation will not take much time.

It is necessary

    • 250 g pork;
    • 250 g of beef;
    • 300 g pork liver;
    • bulb;
    • 2 cloves of garlic;
    • half a loaf;
    • 2 eggs;
    • vegetable oil for frying;
    • spices and salt.

Instructions

Step 1

Rinse the liver, pork and beef. Peel them from the film, remove the streaks and pass through a meat grinder. Pork liver should be pre-soaked in cold water or milk for an hour. From this it will become much softer. To make the tortillas juicy, give preference to chilled meat rather than frozen meat.

Step 2

Cut the onion into small cubes. Heat the oil in a pan and fry the onions in it. Brown it a little and add to the meat mass.

Step 3

Pour the egg into the minced meat, squeeze the garlic teeth through a press, salt and add spices to taste. Mix everything thoroughly. For piquancy, you can add chopped parsley. If the minced meat is liquid enough, you can add a couple of tablespoons of flour to it, then mix again and leave alone for 20 minutes.

Step 4

Prepare bread strips. It is better to use a slightly dried loaf. To do this, cut a fresh loaf into slices, and then into small cubes. Place them in a preheated 180-degree oven for three minutes. They will play the role of a kind of claws. The loaf can be safely replaced with rye bread, it's a matter of taste.

Step 5

Form the minced meat into tortillas. They should resemble the paws of a bear. Place bread claws on top. As a rule, no more than 3-4 blocks are required for one "paw".

Step 6

Break an egg in a bowl. Dip the "bear paws" in it, then place them on a baking sheet. Preheat the oven to 200 degrees and cook the tortillas in it until tender. This usually takes at least 30 minutes. Do not bake this dish for a long time, there is a risk of overdrying it. A sign of readiness can be the clear juice flowing from the cakes when pressed with a fork.

Step 7

Serve the finished bear paws hot. A suitable side dish for this Mordovian dish will be mashed potatoes and vegetable salad. However, it can also act as a full-fledged independent dish.
