It is necessary

  • - a bar of dark chocolate - 125 g;
  • - whole almonds - 250 g;
  • - chicken eggs - 3 pcs.;
  • - sugar - 250 g;
  • - cocoa - 2 tbsp. heaped spoons;
  • - lemon - 1/2 pc.;
  • - ground cloves, cardamom and cinnamon - 1/3 teaspoon each;
  • - Madeleine baking dish.

Instructions

Step 1

Grate a bar of dark chocolate on a coarse grater, set aside temporarily. Chop the almonds immediately without removing the shell.

Step 2

Break chicken eggs. Remove the yolks, as they are not needed, and pour the whites into a blender. Pour sugar there. Beat until fluffy white foam forms.

Step 3

Mix together dark chocolate, almonds, protein mass, cocoa, zest of half a lemon and spices. Take a piece of the resulting mass, roll in powdered sugar and put in the "foot" of the Madeleine molds. Tamp and remove on parchment. Repeat this until the mixture ends.

Step 4

Place the Bear's Paws cookies in a dark but warm place. Let it stand until morning, dry up. Then it will need to be carefully transferred to a baking sheet and baked in the oven at 180 degrees.

The cookies are now ready - they are soft on the inside and covered with a thin crispy crust on the outside. But if you want, you can coat it with chocolate icing on one side. To do this, you need to mix in a clear sequence: 3 tbsp. cocoa spoons with 1/2 tbsp. powdered sugar and the same amount of milk, 1, 5 tbsp. spoons of softened butter and vanilla. Apply the resulting frosting to half of the cookie. That's all, after 5-10 minutes you can already eat it.
