To make a persimmon cake you will need:

Add zest and kefir to the puree. Mix everything. Beat butter and sugar with a mixer, adding eggs in turn. Combine the mixture, soaked raisins and mashed potatoes, bringing to a homogeneous state.

If you want a richer persimmon flavor in baked goods, you can add it to any sweet cake recipe. The only difference is the wateriness and sweetness of the fruit. This slightly changes the proportion of flour and sugar. You can also use this simple recipe, for the preparation of which you will need:
- persimmon - 3-4 pcs;
- flour - 300 g;
- sugar - 1 glass;
- sour cream - 250 g;
- eggs - 4 pcs;
- baking powder - 20g;
- salt to taste.
To prepare the cake, you must first mix the eggs with sugar with a mixer. Then add sour cream and mix everything again. Add baking powder, salt and beat again with a mixer. Next, the sifted flour must be added to the container with the resulting mixture, stirring constantly.
After the dough is done, the persimmon should be prepared. It must be washed and cut into small pieces. Then mix the dough with persimmon, pour into a greased form and put in the oven at 180 ° C. The readiness of the cake is checked with a match or a toothpick, and the baking process usually takes about 30-40 minutes.
