Delicate green shoots of garlic, often referred to as "arrows", are a great flavoring addition to many dishes. You can use them in place of the garlic cloves for a more complex and subtle aroma and flavor. There are also a number of Asian dishes that add exactly garlic shoots and dozens of recipes for spices, sauces, vinegars and sandwich spreads.

Step 1
Only the first tender shoots of garlic are suitable for food. As a rule, these are spring "arrows", since garlic is most often planted at this time of the year. By summer, the shoots become rough, bitter and with a strong taste. Before cooking, scald the arrows with boiling water, pat dry with paper towels and cut into small pieces.
Step 2
You can dry the cut shoots. To do this, it is enough to spread them out on baking paper and leave for several days in a dry, sunny, well-ventilated place. Dried shoots are placed in an airtight container and stored in a grocery cabinet.
Step 3
Fresh or dried shoots are added to all dishes where garlic cloves are appropriate. They are placed either in heated oil before the main ingredients, if you are preparing to stew or fry, or after all the ingredients in boiling water, in case you are cooking something. Garlic shoots, placed at the very beginning of cooking, give the dish a light garlic aroma and a slightly sweet taste. The added “arrows” at the very end can lead to the fact that the taste of the food will be rough.
Step 4
Try replacing the herbs in the pesto with garlic shoots for a fresh and original flavor. Add chopped "arrows" to sour cream and season rich soups, dumplings and similar dishes with it. Combine sprouts with chopped basil, oregano, pepper and salt, add olive oil and season with vegetable salad.
Step 5
Place the young shoots of garlic in apple cider vinegar or table vinegar and leave in a warm, dark place for a few weeks. You will have garlic vinegar that can be used in pickles and salad dressings.
Step 6
An original garlic garnish can be prepared by frying the shoots in heated olive oil over high heat for 2 minutes. Then reduce heat to medium, pour freshly squeezed lemon juice over the garlic, season with salt and pepper and cook "arrows" until they become transparent and soft.
