- eggplant - 3 pieces;
- onion - 2 heads;
- tomatoes - 4 pieces;
- vegetable oil;
- head of garlic;

- bell pepper - 2 pieces.
Instructions
Step 1
Wash and peel potatoes and eggplants. Cut them into cubes. Use young eggplants for cooking, as the overgrown ones contain a large amount of seeds and are bitter.
Step 2
Pour potatoes with a small amount of water and set to cook for 10 minutes. Fry eggplants in vegetable oil until half cooked.
Step 3
Peel 2 heads of onions (1 large), carrots from the skin, bell pepper - from the stalk and seeds. Wash vegetables, cut into cubes.
Step 4
Place the tomatoes in boiling water for 2-3 minutes. As soon as the skin bursts, peel it off. Cut the peeled tomatoes into cubes.
Step 5
Fry vegetables in sunflower oil until half cooked in this order: carrots, onions, tomatoes.
Step 6
Add toasted vegetables and fresh bell peppers to the potatoes, salt and simmer all together for 10-15 minutes.
Step 7
Peel a small head of garlic, chop it finely and add to the vegetables 2-3 minutes before the end of cooking. Sprinkle freshly ground pepper on the dish at the same time.
Step 8
Serve the dish warm and sprinkled with finely chopped herbs.
