A light and satisfying salad that is perfect for those who closely monitor their figure. It turns out to be very tender and juicy.
Ingredients:
- Chicken breasts - 400 g;
- Tomatoes - 2 pcs;
- Table mustard - 30 g;
- Hard cheese - 250 g;
- Garlic - 3 cloves;
- Fresh cucumber - 2 pcs;
- Green parsley - half a bunch;
- Provencal mayonnaise - 80 g;
- Ground black pepper and salt.
Preparation:
- Separate the chicken fillet from the bone, rinse thoroughly in running cold water, then put in a saucepan with hot water, add a little salt and cook until cooked over medium heat.
- Cool the boiled meat, remove the skin, and chop the pulp into small strips along the growth of the fibers.
- Pass the hard cheese through a fine grater.
- Peel off all the chives, rinse, finely chop or grind in a blender.
- Rinse all cucumbers and tomatoes thoroughly in running water.
- Chop the cucumber into small cubes, transfer to a deep container, salt and set aside for a few minutes, so that they are infused.
- Divide the tomatoes into quarters, and then each into two parts, as well as put the cucumbers in a separate container, season with salt, put in the refrigerator.
- After the vegetables have been infused, they must be transferred into one salad bowl along with chicken meat, season with garlic, cheese shavings, and mix thoroughly.
- Put mayonnaise and mustard in a separate bowl, beat the dressing thoroughly until smooth. Season salad with mustard sauce, add salt and black pepper.
- Wash, dry and chop the parsley, sprinkle with herbs before serving.
