  • - premium wheat flour - 1, 5 tbsp.

Step 1

Prepare the finished yeast dough in advance, remove it from the freezer of the refrigerator. It will thaw in 60-90 minutes. Or leave the dough in the refrigerator overnight at a temperature of +4 degrees, it will also be ready to work.

Step 2

Prepare raisins in advance. Rinse it well in several waters, put it in a convenient container and fill it with cognac or liquor. After soaking the raisins in the cognac, leave it overnight.

Step 3

Make the custard when the time is right. To do this, put the milk and vanilla sugar over medium heat. While the milk is heating, wash the eggs, break them into a deep bowl, beat with sugar. Add flour at the end of the action. Remove the almost boiled milk from the heat and start pouring in a very thin stream into the egg mixture. Initially, pour in 1/3 of all the milk, while actively whisking the composition. Next, pour the resulting mixture into hot milk and put on heating. Cook the cream over low heat for 5-7 minutes, stirring constantly. Remove the pan with cream, cool.

Step 4

Roll out the dough on a work table sprinkled with flour. Lubricate the layer with cream using a spoon. Sprinkle the cream heavily with raisins. Roll the filled dough into a roll. Cut rings 2 cm thick from the blank. Use only a sharp knife. Moisten the ends of the rings with water and stick on the bottom of the buns.

Cover a baking sheet with parchment paper, place the buns on it. Lubricate the products with yolk, leave for proofing for 20 minutes.

In an oven preheated to 180 degrees, bake the French buns for 20-25 minutes. Brush hot buns with sugar syrup for shine. For syrup, mix equal proportions of sugar and water and boil. Serve ready-made French buns for breakfast.
