Lush buns with a fragrant orange filling can be prepared in muffin molds: this will ensure that the filling does not leak out and does not stick to the baking sheet, and the buns will turn out to be neat and very appetizing!

It is necessary

  • - orange - 1 pc.
  • - warm water - 1/4 cup
  • - yeast - 1 tbsp. l.
  • - butter (for dough) - 100 g;
  • - milk - 3/4 cup;
  • - flour - 1/2 cup;
  • - sugar (for filling) - 1 glass;
  • - sugar (for dough) - 1/2 cup;
  • - salt - 3/4 tsp.
  • - ghee (for filling) - 1/2 cup
  • - chicken egg - 3 pcs.

Instructions

Step 1

Dissolve yeast in water and let it brew for 5 minutes for a reaction to occur.

Beat eggs in a separate bowl with a mixer. Whisk on low speed while adding sugar and salt.

Melt the butter in a saucepan and, as soon as it is completely melted and frothy, add the milk and turn off the heat immediately. Let the mixture cool slightly (we don't want the eggs to boil in it!).

Add the cooled butter and milk mixture to the egg mixture.

Whisk, now add yeast and whisk again.

Then add one glass of flour, stirring thoroughly at low speed each time.

After the 4th glass of flour, beat for another 3-5 minutes, then see if there is enough flour in the dough. If the dough easily comes off the walls of the dishes, then there is enough flour. Otherwise, add a little more flour, but there should be no more than five glasses in total!

Cover the dough with cling film and refrigerate for 3-4 hours or overnight.

When the dough has almost doubled its original volume, remove it from the refrigerator and make the orange frosting! To do this, you will need sugar, ghee, the zest of a whole orange, and the juice of half an orange.

Step 3

Melt the butter and pour it into a bowl of sugar.

Add zest and orange juice.

Mix well. You should get a pretty thick frosting.

Place the dough on a floured work surface. Roll out and brush with glaze, not reaching 1-2 cm to the edges of the crust.

Carefully wrap the crust with the filling to make a roll like this. Use a brush to brush away any flour that has stuck to it. Now cut the roll into 24 equal pieces. This is easier to do this way: cut the roll in half, then each half - again in half, and so on, until you have 24 rolls!

Oil the muffin molds.

Place the buns into the mold. To prevent accidental icing from ruining your oven, place the baking dish in a baking sheet lined with parchment paper.

Leave the buns in a warm place: they should rise! When the buns have doubled their original volume, send them to the oven preheated to 190 degrees and bake for 15 minutes.
