It is customary for Christian families to celebrate the bright holiday of Easter on a grand scale and generously set the table. Easter cake rightfully occupies one of the main places on it. There are quite a few recipes for baking such cakes, and each housewife has her own, but the basis of baking is the same for everyone.
It is necessary
-
- 2/3 cup milk;
- 20-25 grams of yeast;
- 3-4 yolks;
- 1/2 cup sugar
- 1/3 teaspoon salt
- 80 grams of butter;
- 2 tablespoons of vegetable oil;
- 1/4 cup raisins
- 1/4 cup candied fruits;
- 1 tablespoon of brandy;
- 250 grams of powdered sugar;
- 1 pack of vanillin;
- egg white.
Instructions
Step 1
Make a dough. To do this, dissolve the yeast in warm milk in a bowl. Add one tablespoon of sugar and four tablespoons of flour to a bowl. Stir everything thoroughly with a whisk so that there are no lumps.
Step 2
Cover the bowl with a clean towel and set it in a warm place for two hours to rise.
Step 3
Separate the whites from the yolks. Beat them thoroughly with a mixer. If the yolks you are using are pale yellow, add a dash of saffron to them. Thus, the dough of your cake will turn out to be an appetizing yellow color.
Step 4
Melt the butter in a water bath.
Step 5
Add whipped egg yolks and butter to the brew. Then add sugar, cognac, vanilla and remaining flour gently.
Step 6
Gradually pour vegetable oil into the dough until the dough acquires a uniform consistency and becomes elastic.
Step 7
Cover the dough with a towel and set in a warm place for two hours. After the specified time, the dough should be kneaded, and then covered again and placed in a warm place for forty-five minutes.
Step 8
Now stir in the raisins and candied fruits into the dough.
Step 9
Next, divide the dough into balls and place them in pre-prepared baking dishes, in the middle of which you first place parchment paper. Gently distribute the dough in the tins, cover them and place in a warm place for one hour.
Step 10
Preheat the oven to one hundred and eighty degrees, put the molds with the dough in it and bake the cakes for twenty minutes.
Step 11
Then cover the surface of the cakes with foil, lower the temperature to one hundred and sixty degrees and bake for one hour.
Step 12
After the specified time has elapsed, remove the forms from the oven and remove the cakes from them.
Step 13
Now prepare the icing to decorate the baked goods. To do this, beat the whites with powdered sugar with a mixer at maximum speed.
Step 14
Decorate the cakes with icing, and top with multi-colored sprinkles.
