Kuksu (or kuksi) literally means noodles. This dish is considered traditional by Koreans and Uzbeks. Kuksu is not a high-calorie dish, so it becomes a real salvation in the summer heat. In addition, before serving, this dish is cooled in the refrigerator.

Ingredients:

500 g of beef (or any other lean meat)

500 g fresh cabbage

700 g fresh cucumbers

2 tomatoes

1-2 pcs. onions

3-4 cloves of garlic

0.5 teaspoon ground coriander

5 pieces. chicken eggs

1 bunch of dill

1 bunch of cilantro

1-2 packs of spaghetti # 1

vegetable oil

2.5 liters of water

soy sauce

vinegar

salt

150 g sugar

black pepper (ground)

red hot pepper (ground)

Preparation:

1. Pour 2.5 liters of water into a large saucepan. Add 1 tablespoon of salt, a little vinegar, 130 g of sugar, 30 ml of soy sauce. Mix everything thoroughly until complete dissolution. Then you need to cut the tomato and cucumber into small strips, and finely chop the greens. Put all this in water, mix, and then put the pan in the refrigerator.

2. The meat should be cut into strips, the thickness of which is 6-7 mm. Then pour a little vegetable oil into a deep frying pan, wait until it warms up, put the meat on the bottom. It must be simmered under the lid for 20-30 minutes.

3. While the meat is being cooked, you should thinly chop the cabbage, cover it with a tablespoon of salt and mix thoroughly, squeezing lightly with your hands. Put it aside. Next, you need to thinly cut the onion.

4. Remove the lid from the pan, evaporate excess liquid, if there is a lot of it. As soon as the meat begins to fry, you need to add onions to it, mix everything. Squeeze the cabbage, then put it in the pan as well. The dish is stewed under a closed lid for 10-15 minutes, it needs to be stirred from time to time. Then add salt, crushed garlic, coriander, and other spices, if necessary. Stir everything again, then remove from heat and cool.

5. Cucumbers need to be thinly cut lengthwise (if they are long, then first divide them into several parts), sprinkle with salt, stir, and then set aside. When they give juice, salt them, add a pinch of coriander, a little sugar, a teaspoon of soy sauce, and a teaspoon of ground red pepper (hot). Mix everything well and put in the refrigerator.

6. Now it remains only to boil the noodles, then rinse it with cold water, let the liquid drain.

7. And finally, you can collect kuksa into a single dish. Put the noodles in a deep plate, pour over it with muri (point 1), add 1-2 tablespoons of salad and meat each. Then sprinkle with sesame seeds on top. And you can try! It turns out very tasty. Moreover, kuksu can be eaten both hot and cold.
