Sometimes mushrooms are boiled before frying. This is optional. The beauty of these mushrooms is that almost no oil is required to prepare them - they are fried in their own juice.

So, rinse the mushrooms thoroughly, cut off the legs, and cut the caps into thin slices. Heat some olive oil in a non-stick skillet and toss the mushrooms into it. Reduce heat and wait for the mushrooms to release juice.

After lightly adding mushrooms, add heat. When half of the liquid has boiled away, cover the skillet with a lid and reduce heat again. The mushrooms are ready when the inside is soft and the top is browned.

Please note that during the cooking process, the mass of the mushrooms is almost halved.

After frying and cooling the mushrooms, you can start preparing the salad. For a mushroom dish, you can take chicken, a variety of vegetables, eggs, cheese.

The first recipe: 300 g of raw chicken liver and fried mushrooms, 3-4 potatoes, onion, medium carrots, three eggs, 150 g of hard cheese, 2 tbsp. vegetable oil, half a glass of mayonnaise, salt, pepper.

Boil the peeled carrots and potatoes. Hard boil the eggs. Cut the onion into half rings.

To prevent the shells from cracking during cooking, place them in cold, salted, or vinegar-acidified water.

Wash and cut the chicken liver into small pieces. Heat the oil in a skillet and add the liver to it. Simmer until half cooked, add onion. Sprinkle with salt and pepper. Simmer until tender.

Grate cheese, separately whites and yolks, and boiled potatoes with carrots. Layer the salad in layers: potatoes + mayonnaise, mushrooms + mayonnaise, chicken liver, carrots + mayonnaise, cheese + mayonnaise, proteins. Garnish with crumbled yolks.

A very delicate salad is obtained from marinated fried mushrooms. Take: pickled mushrooms - 1 can (0.5 l), a large onion, two large pickled cucumbers, 4 boiled potatoes, a glass of heavy cream, salt, black pepper.

Chop the onion and cut the mushrooms into slices. Throw in a preheated skillet, greased with vegetable oil. Fry until tender.

Cut potatoes into cubes, combine with mushrooms and onions, salt. Whisk the cream until a fluffy foam forms, add a pinch of pepper. Season with the resulting sauce while still warm salad.

Champignons are very satisfying. Therefore, it is recommended to cook light mushroom dishes, dressing them not with mayonnaise, but with olive oil or sour cream.

We recommend trying a light and tasty salad, for which you need: boiled chicken fillet - 1 pc., Eggs - 4 pcs., Two cloves of garlic, large mushrooms fried in large pieces with onions - 6 pcs., Cheese - 100 g, crab sticks - 3 pcs., Half sour cream with kefir - 50-60 ml, salt, black pepper.

Tear the chicken fillet with your hands, cut the crab sticks and cheese into cubes. Squeeze the garlic into the mixture, add the fried mushrooms.

Make a thick omelet without milk, add a little salt. Cool and cut into strips. Combine all ingredients. Mix sour cream with kefir, pepper lightly. Season the salad.
