Poultry cheese can be served as an appetizer or as a main course. For cooking, use chicken, turkey, duck, based on taste preferences. The dish turns out to be airy and tender, red wine and white sauce add spice to the taste.
It is necessary
- - poultry meat - 500 g;
- - broth - 3 tbsp. l.;
- - cheese - 300 grams;
- - red fortified wine - 5 tbsp. l.;
- - white sauce - 15 tbsp;
- - butter - 250 grams;
- - salt, nutmeg, pepper - based on taste preferences.
- For the white sauce:
- - poultry broth - 200 ml;
- - carrots - 2 pcs.;
- - parsley, celery - 2 roots each;
- - bow - 2 heads;
- - flour - 2 tbsp. l.;
- - butter - 4 tbsp. l.;
- - bay leaf, salt, pepper (peas), citric acid - based on taste preferences.
Instructions
Step 1
You must first prepare a white sauce. To do this, fry the flour in a pan (with or without oil) until it becomes yellowish in color.

Dilute the mass with broth, you can also use a decoction of vegetables or plain water.

Finely chop the onion, parsley and celery roots, fry them in a pan. You can add carrots if desired.
Step 4
Combine chopped vegetables and roots with a liquid mass, add bay leaves, pepper.

Cook the mixture over low heat for about half an hour, then rub the greens with a sieve. Salt the resulting sauce and add citric acid.

Then you can proceed directly to making cheese from poultry. Fry the pulp (without skin and bones) in a pan until tender. Then grind the meat twice with a meat grinder.

Add the previously prepared white sauce to the minced meat. Grate the cheese and combine with the meat mass, stir the components vigorously.

The butter should be taken out of the refrigerator in advance so that it acquires a soft consistency. It should be put into minced meat.

After that, combine the mass with broth and beat until an airy consistency is formed. Next, pass the composition through a sieve, pour in wine, put salt, nutmeg, pepper. Any wine can be taken, but fortified is better.
Step 10
Shape the poultry cheese into a roll. Serve decorated. For this purpose, herbs, tomatoes, bell peppers, olives and more are used.
