Fried breast with mushrooms
This is one of the easiest chicken mushroom recipes. It does not require any special culinary skills or sophisticated technique. Heat treatment of all products is done in an ordinary frying pan.
All the necessary ingredients can be easily bought at any supermarket:
- chicken breast (2 pieces);
- 300 grams of mushrooms;
- 2 large onions;
- a glass of sour cream;
- 50 grams of vegetable oil;
- a few cloves of garlic;
- salt and seasonings for meat;
- and fresh herbs to decorate the finished dish.
Peel the onions and mushrooms. Wash the fillet and, after drying with napkins, cut into small (2-3 cm) pieces.
Fry the chopped onion in half rings in vegetable oil: 1-2 minutes over high heat, then slightly reduce the gas and sauté, stirring, for another 4-5 minutes.
In the meantime, you need to prepare the mushrooms. If using frozen ones, remove them an hour or two before cooking. You can start working with fresh ones right away. Wash them, cut them a little coarser than the meat.
Once the onions are soft and golden brown, add the chicken to the skillet. Fry it for 10 minutes. Add mushrooms and stir mixture. Don't forget to add salt and spices!
Fry the dish over medium heat for another 5-7 minutes. During this time, the excess liquid will evaporate, and the chicken fillet will become soft and juicy.
While the meat with mushrooms is cooking, make the sauce: chop the garlic and herbs and mix with sour cream. It will need to be poured to meat and mushrooms, then cover the pan with a lid and simmer all together for 5-7 minutes.
The finished meal turns out to be juicy, aromatic and incredibly tasty. It can be served as a main dish, but a better option would be to additionally prepare a side dish: boiled or fried potatoes, pasta, rice, etc.
Chicken with mushrooms in cheese sauce
This delicate delicacy is perfect for both a home dinner and an important family celebration. The main ingredient of this dish is a spicy cheese sauce that evokes the thoughts of high-society receptions at the Palace of Versailles, but it is quite simple, takes little time and is prepared with the most common products that can be found in any home:
- 300-400 grams of champignons or other mushrooms;
- a pound of chicken fillet;
- 150 grams of hard cheese;
- 0.5 liters of 20% cream;
- some vegetable oil;
- as well as salt and spices for meat: ground black pepper, Provencal herbs, etc.
Wash the mushrooms and cut them into medium-sized pieces: champignons into 4 parts, oyster mushrooms - into slices 2-3 cm long. Boletus and other forest mushrooms with dense pulp can be chopped even smaller.
Rub the cheese on a coarse grater.
First rinse the chicken breast in warm water and pat dry. The pieces of meat should be small - 1-2 cm.
Now you need to prepare each component of the dish step by step. First, pour a few tablespoons of oil into a preheated pan and put the mushrooms there. Fry them over high heat until a golden brown crust forms. Place them in a clean bowl and cook the meat in the same oil. There is one important condition: chicken fillet cannot be kept on fire for a long time without adding water, otherwise it will become dry. 5-7 minutes is enough.
Next, both components must be mixed in a frying pan, salt, add seasonings and mix thoroughly. Then pour in the cream and, reducing the gas to medium, let it thicken a little.
The last step remains. Let the meat boil again, sprinkle with grated cheese and keep it on fire for another 1-2 minutes. Chicken sauce with mushrooms and cheese is ready!

If you believe the chef's mythology, the name "fricassee" came from mid-range French restaurants, where it was customary at the beginning of the day to collect the remains of yesterday's products and make from them hearty and cheap food for poor visitors. The literal translation means "all sorts of things" - and, indeed, such a dish can be prepared with the addition of almost any product.
The classic recipe contains few ingredients:
- mushrooms (300-400 grams);
- bell pepper (1 piece);
- garlic (no more than 2-3 cloves);
- a glass of 20% cream;
- 80 grams of sour cream (about 5 tablespoons of liquid or 4 - thick);
- fresh herbs;
- a tablespoon of flour;
- some vegetable oil;
- as well as salt, ground black pepper and other seasonings of your choice.
If desired, you can add other products to the dish, for example, fried zucchini or carrots.
Wash and finely chop the fillets. Chop herbs and garlic; sprinkle them on the meat.
Chop the onion and bell pepper into cubes or half rings, the mushrooms - in small pieces, no more than 2-3 cm (when frying, they will decrease even more).
Fry the onion in a little oil until soft. Add bell peppers to it and sauté over medium heat for another 5 minutes.
The meat and mushrooms in this recipe are laid out together and fried with vegetables for another 10-15 minutes. At this stage, add salt and spices to the dish.
The next step is cream. It is necessary to dilute the flour in them and pour the mixture into the pan. Reduce heat a little more and simmer covered for 5-10 minutes.
Chicken fricassee with mushrooms goes well with any side dish. It can be prepared as an everyday meal or made an important part of the holiday table. But learn - this delicacy has a rather high calorie content (468 kcal per 100 grams).

You can make such a hearty casserole from the most affordable products:
- 1 kilogram of chicken breasts;
- any fresh or frozen mushrooms;
- 2 medium-sized onions;
- 150 grams of cheese;
- 2 eggs;
- a glass of sour cream;
- 100 grams of heavy cream;
- a few cloves of garlic;
- 1 bunch of fresh parsley
- the same amount - dill;
- 50 grams of vegetable oil;
- half a teaspoon of salt and sweet ground paprika;
- a little (on the tip of a knife) black pepper.
Cut the fillet into small cubes. Place it in a deep bowl and sprinkle with salt and spices. While the meat is marinating (about half an hour), prepare the rest of the food.
Chop the onion into small cubes; mushrooms, on the contrary, are larger (during heat treatment they will dry out greatly).
Let's start frying. Heat 1-2 tablespoons of vegetable oil in a frying pan. Fry the chicken pieces over high heat. Put it in a separate bowl and, without changing the oil, fry the onion (it should take on a honey tint and become soft). Put the mushrooms in the same place. It will take them 5 to 15 minutes to get ready. They should also become soft and gilded.
While the mushrooms are roasting, prepare the sauce. Beat the eggs and pour the sour cream and cream over them. Chop the garlic with a knife or garlic press, chop the herbs. Combine all ingredients and mix thoroughly.
Next, you need to step by step collect all the ingredients in a deep refractory container:
- Place the chicken on the bottom.
- Lay onion with mushrooms on top.
- Pour the sauce over the two-layer cake.
- Rub the cheese on top.
You need to bake the dish for half an hour in a well-heated oven (up to 180-190 ⁰С).
