  • - sweet corn - optional.

Step 1

First of all, you need to talk about one of the components necessary for making navy-style lean pasta. This is okara - the cake left over from the preparation of soy milk.

To get okara, dry soy should be soaked in cold water overnight. In the morning, drain the water, pour in a fresh portion of water at the rate of 1.2 liters of water per 200 grams of dry soybeans. Wipe the soybeans with water with an immersion blender, then strain the mass through cheesecloth and squeeze thoroughly. Soy milk and okara will turn out.

Step 2

Since it is believed that raw soy may contain some toxins, the okara must be steamed or fried first. After a short heat treatment, the okaru can be used.

Step 3

Cook pasta of any shape according to the instructions on the package. It is preferable to choose pasta from durum wheat or whole grains. For those who do not tolerate wheat protein - gluten - it is possible to use any pasta: amaranth, buckwheat, rice or corn flour. Such pasta can easily be found in health food stores or in any supermarket in the diet and diabetic section.

When the pasta is done, rinse it with cold water and set it aside.

Step 4

The process described below can be carried out in parallel with the preparation of pasta, or before or after. Pour vegetable oil into a frying pan with high sides and a lid and heat it slightly. Add finely diced onion, salt and spices. Okara can be added after 1-2 minutes.

Fry, stirring occasionally, until light brown.

Step 5

Without removing from heat, add prepared pasta. You can add a couple of tablespoons of sweet corn for brightness if desired. Stir thoroughly again, cover and simmer over low heat for 5-10 minutes.

During this time, the pasta will warm up, saturated with the aromas of spices and the dish can be considered ready.
