Step 1
Fresh squid must be well peeled from the entrails and all films must be removed. You can buy squid that are already peeled and just rinse out. Do not cut!

Dip the squid carcasses into boiling salted water for a minute. This tender meat is enough for such a cooking time. Do not cook longer, otherwise the squid will taste "rubbery" and it will be difficult to chew. We take out the carcass and cool it completely

Cook the eggs until tender and cool them.
Step 4
Cut the squid into medium strips. In no case should you be small. Straws should be 0.5-1 cm. Three eggs on a coarse grater.
