A roll with a filling is a very beautiful, delicate and velvety dish that is suitable for any dinner, be it family or festive. Of course, you need to tinker with such a roll, but it's worth it.

Ingredients for the dough:

  • 600 g of young zucchini;
  • 100 g flour;
  • 60 g sour cream;
  • 3 raw eggs
  • 1 teaspoon baking powder
  • ½ handful of parsley leaves;
  • salt and black pepper.

Ingredients for the filling:

  • 0.4 kg of curd cheese;
  • 2 cloves of garlic;
  • favorite greens;
  • salt to taste.

Preparation:

  1. Peel the zucchini (optional), rub on a coarse grater, put in a bowl, season with salt, mix and leave to stand for 10-15 minutes. The recipe indicates the number of grated zucchini, therefore it is recommended to take 1 more zucchini to reach 600 net weight.
  2. After this time, gently squeeze the zucchini pulp with your hands and drain all the juice from it, then only 330 g of grated zucchini will remain.
  3. Separate the egg yolks from the whites. In the squeezed squash pulp, stir in all the egg yolks, sour cream, sifted flour, baking powder, black pepper and, if necessary, salt.
  4. Place the egg whites in any container and beat until firmly in the foam. Introduce the protein foam in three passes into the squash mass and stir in with a spoon, making circular movements from bottom to top.
  5. Cover the rectangular baking tray (size 29x35 cm) with cling paper and grease liberally with sunflower oil. Spread washed and dry parsley leaves on top of the oil. Note that baking paper should be just of excellent quality, otherwise, the dough will definitely stick.
  6. So, put the zucchini dough on top of the parsley leaves, without disturbing their location, and flatten. Then send to the oven for 20 minutes, preheated to 180 degrees.
  7. After baking, remove the dough from the oven, transfer it with paper to any towel and leave to cool.
  8. Wash your favorite greens, dry, chop finely, mix with curd cheese and garlic (optional). Salt this mass, if necessary, mix, put in a blender bowl and beat until smooth. Note that the filling can be any, for example, mushroom, vegetable, garlic.
  9. Grease the cooled crust with curd filling, carefully separate from the paper and roll up. Then send it to the refrigerator for a couple of hours for impregnation and cooling.
  10. After this time, remove the zucchini roll with curd filling from the refrigerator, cut, put on a plate and serve with fresh vegetables.
