Main ingredients

To prepare the squash dough:

  • wheat flour - 4 tablespoons,
  • flaxseed flour - 3 tbsp. l.;
  • salt.

To prepare the filling:

  • curd cheese - 200 grams,
  • sour cream - 3 tablespoons,
  • garlic - 3 cloves,
  • greens;
  • salt pepper.

For roasting:

vegetable oil

For decoration:

  • hard cheese;
  • parsley;
  • Cherry tomatoes.

Preparation:

1. Peel the zucchini from the rind and core. Grind in a blender or grater until puree. Squeeze out excess water from the squash mass.

2. Season with salt, beat in eggs, then add wheat and flax flour. Mix everything to make a dough.

3. Heat the pan thoroughly and pour in vegetable oil. Now put the squash dough on the surface of the pan in the form of a thick pancake. When one of the sides is browned, turn the pancake over and fry on the other side. In this way, bake several cakes from the dough to form a squash cake.

4. Adding linseed flour gives a slightly grayish color to the zucchini crust, but gives an excellent taste to the dish.

5. Now you need to prepare the filling, where the main ingredient will be delicate curd cheese. Grind the garlic and dill in a blender, add sour cream and mix with curd cheese. Season with salt and pepper to taste. You can replace sour cream with homemade mayonnaise. Put the filling in the refrigerator for 40 minutes.

6. Place the first courgette crust on a serving dish and brush with a little curd filling. Smear all the cakes and form a squash cake. Put the cake in the refrigerator for 1 hour.

7. Decorate the squash cake with chopped hard cheese shavings, fresh parsley leaves and cherry tomatoes.
