You need to carefully approach the choice of yeast: their color should not be too dark, and give off a little smell with alcohol. Dark yeast will produce a dry and sluggish dough. There is a simple method to check the quality of the yeast: sprinkle a portion of the dough with a small amount of flour. After half an hour, cracks should appear, and if this does not happen, then the yeast is stale.

When choosing flour, pay attention to its gluten and color. The lighter, whiter the flour, the higher its quality. The gluten of high quality flour should be above 24% - this figure is indicated by manufacturers on the packaging.

The standard recipe for making yeast dough is quite simple: flour - 500 grams, butter - 75 grams, 10 grams of dry yeast, a glass of milk, a couple of eggs, half a teaspoon of salt, one and a half tablespoon of sugar, a little vanillin to taste.

All dough products should be at medium room temperature. If necessary, milk can be replaced with water or kefir. If you decide to use water, then it is better to take carbonated water - the dough will turn out to be more airy.

The flour must be sifted - this will fill it with oxygen, which will increase the quality of the dough.

Sugar must be added to the dough very carefully. If you overdo it with it, the dough will not be very fluffy and can easily burn. Also, watch out for the amount of vanillin and soda - their excess gives the dough an ugly color and an unpleasant smell.

The components for the dough must be correctly mixed together. First you need to mix flour with vanilla, then add yeast, salt, sugar, eggs and milk. If you want to make the dough more crumbly, add only egg yolks to it, without proteins.

After all the components are mixed together, cover the dough with a towel, and then put it in a warm place. Wait until the dough rises, knead it thoroughly with your hands, add a little butter. Cover the dough again with a towel, remove to a warm place. Let the dough rise well, but do not overdo it. After its volume has doubled, you can start making the cake.
