After a fun Maslenitsa with delicious pancakes and lush pancakes, the time of Lent comes. During fasting, the diet of believers should include lean dishes. So what to cook on such days, while observing all the rules of Orthodox fasting?
My family loves to make a bean salad that won't take up a lot of your time. It is great for both the festive table and the Lent table.
- Dry beans (red, white) - 500 gr;
- Onions - 2 heads (large);
- Green onions - 1 bunch;
- Cilantro - 1 bunch;
- Vegetable oil - 100-150 gr;
- Garlic - 2 cloves;
- Spices to taste (salt, pepper);
Soak the beans overnight in a large amount of water, rinse them several times in the morning, then pour them into a saucepan and put on fire, cook until cooked. Approximately this procedure takes about 1, 5-2 hours. If necessary, remove the foam, add salt towards the end of cooking so that the beans are not tough.
Put the cooked beans in a colander and let cool. Peel the onion, cut it into half rings, fry in a pan until golden brown. We transfer the beans to a bowl or salad bowl, combine it with fried onions, add green onions, cilantro, garlic, spices to taste.
