Turkey is considered the traditional main dish on the Christmas table, but it can also be prepared for other holidays. The carcasses of this bird are sold chilled and frozen, weighing from one to five kilograms. If the carcass seems too large, you can purchase and cook a turkey breast in the dough.

It is necessary

    • 1 turkey carcass;
    • 1 tbsp. water;
    • 600-700 g flour;
    • 0.5 tbsp vegetable oil;
    • salt
    • pepper to taste.
    • To marinate a 4 kg turkey:
    • 6 liters of water;
    • 125 g salt;
    • 3 tbsp. l. black peppercorns;
    • 1 cinnamon stick;
    • 1 tbsp cumin seeds;
    • a few sticks of cloves;
    • 2 tbsp hot mustard (ready-made or in powder);
    • 120 g sugar;
    • 2 onions;
    • 4 large cloves of garlic;
    • grated ginger root (powder can be used);
    • 1 orange with peel
    • cut into slices;
    • 4 tablespoons honey;
    • fresh parsley or cilantro.

Instructions

Step 1

Prepare the turkey carcass for roasting. If you purchased a frozen turkey, place it in a cool place (refrigerator) two days before cooking. After the carcass is thawed, rub it inside and out with a mixture of salt and black pepper.

Step 2

Use a sharp knife to cut the sides of the turkey's belly and tuck the legs into the inside of the carcass. Secure the wings with wooden toothpicks.

Step 3

Sift flour, pour warm water or milk into it. Add salt, sunflower oil and knead the dough. Place it on a floured cutting board and roll out about one centimeter thick.

Step 4

Place the prepared turkey carcass on the layer. Wrap it in dough and secure the edges. Cut off excess dough with a sharp knife.

Step 5

Preheat oven to 200C. Brush a baking dish with sunflower oil. Place the turkey in a mold and place in a preheated oven.

Step 6

Determine the cooking time of the turkey in the dough at the rate of one hour per kilogram of carcass. Roast the carcass for the calculated time.

Step 7

To make sure the dish is done, pierce it at its widest point. The meat juice of the finished turkey should be clear and free of blood. Remove the bird from the oven and refrigerate slightly. Remove the toothpicks from the wings and place the turkey on a platter.

Step 8

Garnish this dish with a fresh vegetable salad. You can serve the turkey in the dough on the table both warm and cold.
