Traditional mashed potatoes are not only generously flavored with butter and spices, but also milk or cream is added to it. If for some reason you want to do without cow's milk, this does not mean that you will have to exclude mashed potatoes from the menu.
How can you replace cow's milk in puree
There are different alternatives, depending on the reasons why you decide to avoid milk. So, for example, if you are not going to add it to puree because of dietary or medical restrictions, or because you decide to become a vegetarian, vegetable milk can be substituted for animal milk. Soy milk, rice milk, coconut milk and almond milk are great for lactose intolerant and vegan people. To prepare mashed potatoes, these types of milk replace cow's in a 1 to 1 ratio, and instead of fatty aromatic butter, they take dairy-free margarine or vegetable fats.
When choosing plant-based puree milk, avoid sweetened foods.
Those who avoid cow's milk due to their low-fat diet are advised to replace it with chicken or rich vegetable broth. If you just didn't have any milk or butter at home, but you accidentally have fat (20%) cream, then remember that half a glass will replace you with the same amount of milk and 1 tablespoon of butter at the same time. If you only have whey of all dairy products, then it will also work for mashed potatoes.
How to make mashed potatoes with chicken broth
To make a dairy-free broth puree, use:
- 5 large starchy potatoes;
- 3 ½ cups of chicken stock;
- 1 clove of garlic;
- 1-2 tablespoons of vegetable oil;
- salt pepper.
Wash the potatoes thoroughly under running water, peel and cut into cubes of equal size. Rinse them again. Place the potatoes in a saucepan, add the peeled garlic clove and pour in the broth. Bring to a boil and cook until the potatoes are tender. Drain the broth into a separate bowl, remove the garlic. Mash the potatoes with a crush or pass through a special press, gradually pour in the broth, achieving a homogeneous, fluffy mass. Add vegetable oil and season with salt and pepper to taste.
If you want to make a puree without salt, add dried dill to it for a salty flavor.
Mashed potatoes with butter
Good chefs know the secret of making mashed potatoes without adding any liquid at all, but they cannot be persuaded to do without butter. To make the perfect dairy-free puree, you will need:
- 4 large potatoes of starch varieties;
- 3 tablespoons of butter;
- salt.
The whole trick of making this puree is that the potatoes are steamed. Thus, avoiding direct contact with boiling water, the potato is boiled, but the starch cells in it are not destroyed. Wash, peel, rinse and dry the potatoes. Cut it into equal slices and place in a steamer bowl, pour 2 cups of hot water on the bottom, bring it to a boil, cover and steam the vegetables for about 20-30 minutes until cooked. Chill the potatoes slightly, pass through a press or purée with a special device, season with oil, salt and serve.
