Step 1
Wild meat can be boiled, fried, or baked. The first method is the simplest, but also the most undesirable, since during cooking the meat loses its taste. However, it is quite suitable for soups and borscht. If you want to cook cutlets, then it is better to mix wild meat in half with beef or pork.
Step 2
Frying such meat is also not worth it, as it will almost certainly be tough. An exception is the preparation of barbecue, this dish has its undeniable advantages. When preparing meat for barbecue, it is kept in a marinade for some time, which gives the barbecue softness and a special taste. The exact holding time depends on the marinade recipe. For wild meats, you can use an onion-based marinade as the vinegar will make it even tougher. The recipe for the marinade is very simple: cut the onion into rings, mash with salt and spices until juicing. After that, carefully move the onion and meat so that it is saturated with juice. Leave the meat for about half an hour, then you can string it on skewers.

It is best to bake wild meat, then it turns out to be very tasty. It should be baked in a metal form, after covering it with foil. The edges of the foil will then cover the meat from above, which will prevent it from burning and will allow it to stand in the oven for about an hour and a half - in this case, even tough meat will have time to heat well and become soft.
Step 4
One of the recipes for cooking wild meat is as follows. If you, for example, cook duck, pluck it first, singe it over a fire, gut it. Then decide whether you will bake it whole or cut it into pieces. A whole duck looks prettier, but requires more cooking time. In addition, then it is rather inconvenient to cut it. Therefore, it is easier to cut it into pieces right away.
Step 5
For garnish, cut about 5-6 large potatoes into small strips. You will also need three large onions: cut two into large slices, about 4-6 pieces each. Cut the third into rings. Cut 3-4 tomatoes into small wedges. You will also need spices - bay leaves, dill, parsley, red and black pepper, etc., according to your taste. Salt the potatoes and meat.
Step 6
Pour some vegetable oil on the bottom of a foil-lined form, pour half of the potatoes, a third of the onion and half of the tomatoes. Sprinkle with spices, stir. Lay the meat on top, sprinkle with spices again. Move the remaining potatoes with onions, tomatoes and spices and place on top. Close the edges of the foil, press down to prevent the foil from opening. Make a couple of small punctures in it with a knife on top. Cook at 200 degrees for an hour and a half. You can change the basic recipe as you like.
