It is necessary

  • - flour - 150 g;
  • - dry yeast - 10 g;
  • - veal pulp - 350 g (you can have more, to taste);
  • - medium onion - 2 pcs.;
  • - medium radish - 1 pc.;
  • - bell pepper - 1 pc.;
  • - small eggplant - 1 pc.;
  • - garlic - 4 cloves;
  • - tomato - 3 pcs.;
  • - cilantro - 3 branches;
  • - dill - 3 branches;
  • - red wine - 50 ml;
  • - ground coriander - a pinch;
  • - ground black pepper - a pinch;
  • - sugar - a pinch;
  • - vegetable oil - 4 tablespoons;
  • - a little salt.

Instructions

Step 1

Cooking the dough. Dissolve yeast in half a glass of water. Leave the yeast for 25 minutes. During this time, they will come to life. Dry yeast can be replaced with regular yeast (20 g). Add a pinch of salt (preferably sea salt) and prepared yeast to the sifted flour.

Quickly knead the dough, cover it with a clean towel and leave to rise for about half an hour.

Step 2

While the dough is rising, let's turn to the gravy ingredients.

We wash the meat (you can use not only veal, but also pork) and cut into thin and long strips. Remove the film and veins, so the finished meat will take on a more appetizing look. Place the sliced meat in a bowl, season with ground pepper, coriander, salt and fill with red wine. Mix (preferably with your hands) and set to marinate.

Step 3

Cut the peeled onions into half rings. We clean the bell pepper from veins and seeds, cut into strips. Cut the radish into medium strips. We wash the eggplant, dry it, cut it into cubes. Cut ripe medium-sized tomatoes into cubes. Place the prepared vegetables in a bowl and set aside.

Step 4

While we were cooking meat and vegetables, the dough had already risen. Add flour to the bowl (look at the consistency) and begin to knead the soft dough, which should not stick to your hands. We form a long bar from the dough and divide it into pieces that are centimeter thick.

Step 5

We form balls from the pieces and make donuts. Flatten the balls into a small cake, which we grease with oil. We roll it up with a roll, pinch the ends.

Cooking steamed dumplings for about 45-60 minutes. You can also cook in a multicooker, as it is more convenient for anyone.

Step 6

Cooking gravy for donuts. It is better to do this in a cauldron, but you can take a steel pan. We heat several tablespoons of vegetable oil in it, in which we fry the crushed garlic for a minute. Make sure it doesn't burn.

Step 7

Remove the garlic from the oil and fry the chopped eggplant until golden.

As soon as the eggplants have acquired a golden hue, add the marinated meat with marinade. With occasional stirring, evaporate the marinade and continue to fry the pieces of meat until a slight blush. Add chopped onion, radish and bell pepper to the meat, mix and continue to fry for five minutes.

Step 8

Put tomato cubes with meat and vegetables, fry for another five minutes. Pour boiling water over the meat and vegetables, which should cover the vegetables a little.

Step 9

After boiling, try the sauce, if it is too sour, then add a pinch of sugar and cook for another twenty minutes over low heat. Before removing the sauce, add finely chopped garlic and herbs. We cook for a few minutes and remove the cauldron from the stove.

Step 10

The sauce and donuts are ready. Put donuts in portioned plates, fill with aromatic sauce, decorate with sprigs of fresh herbs and serve.
