Chicken noodles are simple, delicious, and hearty. Its preparation will not take much time. Even a beginner in the culinary business will be able, following a simple recipe, to surprise their loved ones. In the classic version, the chicken for this dish is boiled, and the noodles are not purchased, but are prepared independently.

- 1 chicken
- 2 onions
- 1 carrot
- 1 parsley root
- 1 bunch of dill
- 1 tbsp. l. butter
- allspice
- salt.
- For noodles:
- 1.5 cups flour
- 1 egg
- 0.5 cups water
- salt.
Instructions
Step 1
To create this dish, you need to use a whole chicken carcass. This is very important for making a tasty broth. If you take white or red meat separately, the taste will no longer be the same. Rinse the chicken in cold water. Place the carcass in a saucepan. Pour in cold water, add salt to taste and cook over low heat. Never pour boiling water over the meat for the broth! The protein in the meat will curdle in the very first minutes, and the chicken will not give all its taste to the water. Then the broth will not turn out rich.
Step 2
Take one medium carrot. Wash it under the tap, peel it, cut it in half. Then you will need two medium onions. Peel them off. Skim the broth, then add the onions, carrots, parsley root and 2-3 allspice peas. Leave to simmer for 1 hour.
Step 3
Take out the cooked meat, let it cool, then cut the carcass into portions. Each portion of meat should weigh approximately 100-150g.
Step 4
Knead the noodle dough. First, pour the flour into a bowl with high edges. Break the egg there, add salt, mix with a fork. Then pour water into the dough in small portions, stirring constantly. The dough should be tough, so when it becomes difficult to stir the mixture with a fork, start kneading with your hands. If the dough is soft and pliable after kneading, add a little more flour for firmness. Divide the dough into 2-3 pieces, make balls out of them. Then roll each one thinly. Dry the dough sheets lightly. Then, with a knife, cut them into strips 4-5 mm wide. Dry a little more.
Step 5
Strain the broth through cheesecloth. Then pour back into the pot and place on the stove. Bring to a boil, add butter and add noodles. Stir the noodles so they don't stick together in the first few minutes. Stir until the broth boils. After 3-4 minutes after boiling, remove the pan from heat, cover with a lid and wrap with a warm towel. Insist for 30-40 minutes.
Step 6
Put the pieces of boiled chicken in a saucepan with butter, heat just before serving. Sprinkle dill over the dish after serving. You can also season the chicken with finely chopped green onions.
