This "Brush" with its texture is a bit like crumpets, which gives it a special flavor!
It is necessary
- For 50 pieces:
- - 1 kg of wheat flour;
- - 200 g butter;
- - 2 tsp baking powder;
- - 2 lemons;
- - 4 oranges;
- - 8 yolks;
- - 4 tbsp. l. Sahara;
- - 1 tsp. salt;
- - 6 tbsp. l. milk;
- - 1 tbsp. l. aromatic alcohol;
- - deep fat oil;
- - honey or powdered sugar.
Instructions
Step 1
Remove the zest from the orange and lemon with a special knife or grater. Squeeze the juice out of two oranges. Dissolve the oil in the microwave or water bath.
Step 2
Sift the flour into a large bowl with baking powder and add the citrus zest. Mix. Collect the mixture with a slide, make a depression in the center and pour in the orange juice, then add the yolks (keep in mind that they should be at room temperature, so take them out of the refrigerator in advance!), Butter, milk, a teaspoon of salt, sugar and alcohol for choice (rum, for example). Mix the ingredients quickly until a smooth dough is obtained. Then roll it into a ball, lightly dust it with flour, wrap it in plastic wrap and send it out in the cold overnight.
Step 3
In the morning, roll out the dough into a layer half a centimeter thick and cut with a knife into strips 6 cm wide. Then cut the strips into triangles. Make a cut in the middle and pull one of the corners through it, giving the cookie a classic shape.
Step 4
Heat oil in deep fat. Adjust the amount so that it covers the "brushwood" during frying. Send the blanks (several pieces) deep-fat and fry for 1-2 minutes on each side. Pat dry on a paper towel to remove excess oil. Then sprinkle with powdered sugar or heat the honey in a jar in a water bath and dip each cookie there!
