    • 1 carcass of a rabbit;
    • 1 liter of milk;
    • 2 onions;
    • 2 carrots;
    • water;
    • salt and pepper to taste;
    • additionally: 3 tablespoons of pork fat.

Instructions

Step 1

Butcher a fresh rabbit carcass. To do this, pull back the skin on the abdomen, then carefully cut it open. Make an incision with a knife from the pelvis to the thoracic-costal septum and carefully remove the giblets. Try not to damage the intestines and gallbladder in any way, so as not to stain and spoil the meat! Cut off the head along the line of the first vertebra of the neck, then sever the abdominal septum and remove the throat, lungs and esophagus.

Step 2

Chop the carcass into a dozen pieces and soak for 15 minutes in cool salted water. Cut off all the fat and melt in a skillet. If not enough, add about 3 tablespoons of pork fat. When it starts to sizzle, fry the meat in it on both sides until golden brown. Then remove the rabbit meat from the pan and set aside.

Step 3

Prepare vegetables for frying: peel a couple of large heads of onions and cut into thin half rings; chop 2 medium carrots on a coarse grater. Mix everything and sauté in rabbit (pork) fat for 5-7 minutes.

Step 4

Place the rabbit meat in a suitable container - heavy-walled metal or heat-resistant glass. The best option is a special elongated container (rooster, goose bowl) or a cauldron. Cooked in such a vessel on the stove, the rabbit meat will be softer and more juicy. Pour one liter of raw cow's milk into a container and cook over medium heat for 20 minutes.

Add fried carrots and onions to the rabbit meat, then table salt and freshly ground black pepper to taste. Place the lid on the meat dish tightly. Simmer the rabbit in milk over low heat until cooked through.
