  • - butter - 70 g;
  • - milk - 500 ml;
  • - water - 5 tbsp. spoons;
  • - citric acid - 1 g;
  • - soda - 2 g.

Instructions

Step 1

Pour 5 tablespoons of water into a saucepan with a thick bottom and heat until boiling. Then we put on low heat and add 6 tablespoons of sugar. When the sugar is completely dissolved, add citric acid. Simmer for about 20 minutes.

Step 2

For making toffee at home, it is better to take milk with the highest percentage of fat content. Baked milk is ideal. Pour it into another saucepan, add 450 g of sugar and heat over medium heat with constant stirring. Add soda. When the milk boils, add 6 tablespoons of the previously prepared syrup. Boil in an open saucepan over medium heat for 30-40 minutes, stirring occasionally. The mass should thicken strongly and acquire a caramel color. When this happens, add the butter, stir quickly until smooth and remove from heat.

Step 3

Butterscotch can be made in one layer by pouring the mass into a large mold, lined with parchment and oiled with odorless vegetable oil. Then this layer is cut into cubes. You can pour the mass into small molds (for example, for ice), but they must be heat-resistant, since the hot mass can melt them. The molds must also be greased with oil - only in this case you can then easily remove the frozen toffee.

Step 4

Pour the taffy in the chosen mold and cool for one hour at room temperature. Then we send it to the refrigerator for another 1 hour. Then we take it out. You can wrap each candy in a square of confectionery paper or cellophane. You need to store toffee at home in the cold for no more than two weeks.
