Green ginger soup is a vegetarian food. When preparing soup, you can not be limited to just one fresh spinach - you can crumble any fresh greens into the soup, the dish will only benefit from this, it will become even healthier.
It is necessary
- For four servings:
- - a liter of vegetable broth;
- - 300 g of young potatoes;
- - 2 bunches of fresh spinach leaves;
- - 150 g leeks;
- - 150 g of carrots;
- - 30 g of ginger root;
- - 2 onions;
- - 3 tbsp. tablespoons of olive oil;
- - sea salt, black pepper.
Instructions
Step 1
Chop the onions finely, simmer in olive oil, stirring occasionally. The onion should be soft and golden.
Step 2
Peel carrots and potatoes, cut into small cubes, immerse in vegetable broth, bring to a boil.
Step 3
Wash the leeks and spinach leaves and chop coarsely.
Step 4
Finely chop the ginger root.
Step 5
Add the onion, spinach and ginger to the boiling broth with potatoes and carrots. Reduce heat, simmer for 5 minutes. Pepper and salt the soup to taste.
Step 6
Pour the prepared green soup into bowls. Top with a spoonful of fried golden onions and serve immediately.
