Instructions
Step 1
Mix sifted flour with sugar and vanilla sugar, add a pinch of salt. Add chicken eggs to the dry mixture, pour in the milk and mix until smooth.
Step 2
Add boiling water to the pancake mixture; the consistency of the dough should resemble kefir. Stir in the vegetable oil, add the coconut and let the dough sit for at least 5 minutes.
Step 3
Preheat the pan, coat it with vegetable oil for the first time; after the first pancake, this is no longer required. Pour a portion of the dough into the skillet, quickly spreading it over the entire surface. Fry until golden brown, then gently turn the pancake over and fry on the other side. Fry the pancakes over medium heat, stacking them on a plate.
Step 4
Defrost the strawberries in advance for the sauce. Use a blender to puree it, chopping it with vanilla and regular sugar. Add balsamic sauce, stir. If you bought a very sweet strawberry, then add lemon juice to it - here you can focus solely on your own taste. This sauce turns out to be very tasty, it goes well with pancakes and other breakfast pastries.
Step 5
Serve the pancakes with coconut and strawberry sauce immediately. In addition to strawberry sauce, you can additionally serve sour cream.
